LI really took a toll on what I could consume. The first few years were much more difficult than the last few were, because in the first years I would not know what I could avoid since it seemed like everything had in a bit of milk. Milk was in simple pasta dishes, cakes, high quality protein shakes… Everything. By the 5th year, I learned to avoid most foods especially dessert (which wasnt a problem, because I wasnt a fan of desserts to start with). However my favourite food which was baked macaroni and cheese, I had to avoid with a passion. Even though I had some really good lactase supplements (Lactaid and later Digestive Advantage – Lactose Intolerance Therapy) after some time they would stop working and I would suffer from the symptoms again. I really thought that this was just a life condition that I’d just have to live through. (thank goodness for most Asian foods, which generally use little milk)

Nothing happened Full Disclosure: I still do have some rumblings when I have some types of dairy e.g one day I had a ceasar salad and a cheesecake and felt a little uneasy, however the uneasyness was much more manageable than normal. In general after that episode, eating moderate amounts of dairy is fine. I even drank a glass of chocolate milk when I was out and around town. AND I WAS FINE… THANKS LACTAGEN!!! Looking for Lactose-Free Bread?

Bread is a staple item, so many things we eat and enjoy revolve around bread!  Just think French baguette…so delicious!  However, finding lactose-free bread can be like finding a needle in a haystack.  Most brands you will find at supermarket contain lactose, as do most bread loaves at your bakery. If you’ve ever thought to yourself it’d be much simpler to make your own lactose free bread than go through the process of finding it, then you are in the right place!

Since bread is a common component of many diets, we are including the following recipe to help you create your own bread lactose free!

The ingredients you will need are:

  • 2 Cups of Warm Water (Recommended temp of 110F)
  • ÂĽ Cup of Vegetable Oil
  • 2/3 Cup of White Sugar
  • 6 Cups of Bread Flour
  • 1 ½ tsp of Salt
  • 1 ½ tbsp of Dry Yeast (Active)

How to make:

Pour the warm water into a large mixing bowl and proceed to dissolve in the sugar. Stir in the yeast and allow mixture to proof until a creamy foam results.

Stir the vegetable oil and salt into this mixture. Add the flour in one cup at a time, mixing each in thoroughly. Begin kneading the dough until smooth over a lightly floured board before placing the dough into a deep and well oiled bowl, turning to coat completely. Cover the top of the bowl with a damp cloth and let the dough stand for around an hour, until it has risen and doubled in size.

Knead the dough for a few more minutes punching it down, before dividing into two portions of equal size. Shape each portion into a loaf before placing each into two well oiled loaf pans 9×5” in size. Allow dough to once more for another 30 minutes, until the dough is roughly 1” above the pans.

At this point proceed to bake the loaves at 350F for roughly 30 minutes.
